Shortbread

Ingredients

140g slightly salted butter

60g icing sugar

1/2 tsp vanilla extract

180g plain flour

Heat oven at 180º

Beat sugar and butter together + vanilla

Add flour and pull together to form a 2” (5cm) thick block. Wrap and chill in the fridge for

an hour.

Cut into 1/4” slices with a sharp knife.

Place 1/2 “ apart on a baking sheet and decorate with a fork.

Bake for 15 minutes or untill golden brown around the edges.

Leave to cool for a few minutes before sliding the paper onto a cooling rack.
